Coyote meat can be made into coyote steaks at campfires found around the Mojave Wasteland with a Survival skill of 50.

Locations
Coyote meat can be found on dead coyotes, coyote pups and coyote den mothers. They will usually have between one and three pieces of meat on their corpses.
