Percolators dominated the coffee preparation market before the Great War, preparing coffee by passing boiling or near-boiling water through coffee grounds repeatedly, until the desired strength was reached. The distinct, two-part assembly was extremely popular among American citizens, found nationwide alongside an endless variety of coffee mugs and tables.
Percolators tend to be susceptible to over-extraction and elimination of the most volatile compounds, reducing the flavor in favor of aroma while brewing. Percolators are divided into two distinct parts: A bottom chamber for cold water and an upper chamber where the coffee grounds are placed. The heat source at the bottom heats the water in the chamber up, forcing it through a pipe that runs all the way to the top of the percolator. The water is then distributed evenly across the coffee grounds, dripping into the bottom chamber through perforations in the top one. The cycle repeats continuously, gradually producing coffee. It is ready for drinking once the overall temperature of the liquid reaches the boiling point.
