Shelter can be difficult if you grow your vault too fast without being able to train your dwellers and equip them with proper weapons and armor. If everyone in your vault has been killed I would suggest just starting over (if you still feel like it) and take it slowly. Make sure you can keep up with all resources before building more rooms and making more dwellers.

Also in fallout 4, 76, 3, and NV mole rats a super easy to kill usually takes 1 to 3 hits depending on the type of mole rat but in fallout shelter it takes about 12 shots
Depends on the level of your dwellers. High level dwellers can kill them in 2-3 shots.

And that's because I dropped my last phone in the toilet so my 1 year fallout shelter vault was gone forever
I’m currently doing a slow, slow “selective breeding” run of FO shelter. Trying to keep my population low and max everyone’s stats. The children of two max stats dwellers will have very high stats by default, and be easier to train to max.
That’s one of the most efficient ways to play, just make sure Endurance is your priority. You get health at level up based on your endurance and clothing boosts at the time of level up, but the health is not awarded retroactively as you raise your stats. So a dweller who does not start leveling up until their E is trained to 10 (and boosted) will always have more health than a dweller who had normal endurance for a while. It can be a staggering difference by rank 50, so that should be your number one priority. One thing to note is that you rarely ever have to level up and XP will not be earned while you wait to click level up, so even your starting dwellers can get 49 full health level ups.
I wish that you could choose an expirement for the vault, like if i picked an overseer when it was over he would die like in vault 11
